Assignment 3: Food and the Environment

This assignment is worth 9% of your final grade
Assignment Goals
1. Understand the geographic location of food production and methods of food processing in a
typical Canadian diet.
2. Practice summarizing data to convey specific information in tabular and written form.
3. Practice writing methods, results, and discussion sections of scientific papers.

Do not wait until the last minute to complete this project. It may require a trip to the grocery store
and it will definitely require some research to find more information!
Steps to Complete Assignment
For all of the food you eat over 3 days, trace the ingredients back to their country of origin and
investigate the practices of the company that produced the items. You will be producing a raw data
table, a summary table, and a short written description of your research and the process by which it
was conducted.
Part 1: Data Collection and Summary
Step 1: Download the food data Excel spreadsheet from the class Quercus site. You will fill it on
the assignment 3 page.
Step 2: Starting with the ‘Raw Data’ table in the spreadsheet (first sheet, see tabs at bottom), enter
all of the food items you consumed over the 3 days into the first column in the spreadsheet.
Organize the information by day and by meal as shown in the Example.
Step 3: List all of the ingredients for each food item (broken down to the simplest unit) in the
second column. Be as detailed as possible, including all preservatives, food colouring, and
“natural” and “artificial” flavour ingredients in each of the items on your food list. If you eat in
restaurants or school cafeterias and have trouble finding the actual ingredient lists, you can
substitute an ingredient list from an equivalent item.

Step 4: Track down the locations where all of the grains, produce (fruits/vegetables), spices, meat,
and dairy used in the foods were grown and processed in the third and fourth columns. (The other
ingredients should be listed, but you don’t need to provide a location for them.)
Example: if you ate bread, wheat will likely be one of several ingredients that was in the bread.
You will need to determine first where the wheat was grown, and second where the wheat and
other ingredients were processed and combined together to make bread.
It is usually easier to figure out the origins of less-processed foods (e.g., fruits and vegetables often
have stickers on them saying where they were grown). You may want to try the food company’s
website to see if it lists where a given product’s ingredients were produced.
The location where the food was processed is usually provided on the label. Otherwise, you can
just determine which country is the main exporter of that ingredient to serve as an educated guess
for where the ingredient in your food originated.
To determine the main exporters of different meat, dairy, grains, produce, and spices (when
this information is not given on the food item):
1. Go to the FAO agricultural statistics website: http://www.fao.org/faostat/en Click
‘Crops’ or “Live Animals’ under Production.
2. Using the drop-down menus, choose the following settings:
Countries = select all.
Element = ‘Production Quantity’
Item = select the specific item you are searching.
Years = ‘2017’
3. Click ‘Show Data’ or ‘Download Data’ and record the country with the highest
production amount (given as ‘Value’ in FOA data). For example, for ‘Almonds, with shell’
for 2012 the top is the US; you would then enter US in the spreadsheet as your educated
guess.
Step 5: Note whether the product is labelled “Natural”, “Organic”, “Free Range” “products of
genetic engineering” or “not products of genetic engineering” or similarly labeled in the last
column of the raw data table.
Step 6: Go to the summary tables on the second sheet of the spreadsheet (use tabs at bottom).
Enter the values for the cells highlighted in yellow (Table 1), based on your raw data table. The
percentages (Table 2) will be calculated for you.

Part II. Describe your findings
Instructions
– Your answers should be typed (standard font, double-spaced).
– Do not include a cover sheet, but please make sure your name and student number is on
your assignment.
– You do not need citations or references for the assignment.
Step 1: Write one formal paragraph describing your methods. This should include a step-by-step
outline of the process you followed, in the order you conducted it. Remember to include enough
detail that others would be able to reproduce your research.
Step 2: Write one formal paragraph summarizing the results of your research. This should be a
succinct narrative report of the data collected in your table.
Step 3: Write one formal paragraph discussing your results and commenting on their significance.
Remember to highlight general trends as well as findings you found noteworthy or surprising.
More details on what each of these paragraphs should include will be presented in tutorial Week 8.
Part III. Submit Assignment
Upload your assignment (the written components, raw data table and two summary tables- tables
can be inserted into a word document through cutting and pasting or uploaded as a separate excel
sheet) through the Quercus assignment.
Please have access to the same documents in tutorial (you will not have to turn it in, but will need
it for discussion).
